The prominent fragrance chemist Günther Ohloff, Wilhelm Pickenhagen, and Philip Kraft convey the scientist, the perfumer, and the interested layman with a vivid and up-to-date picture of the chemistry of odorants and the research in odor perception.

The book details the molecular basis of Olfaction, olfactory characterization of perfumery materials, structure-odor relationships, chemical synthesis of odorants, and chemistry of essential oils and odorants from the animal kingdom, backed up by many examples from perfumery and historical aspects. It will serve as a thorough introductory tool for all those interested in the molecular world of odors.

About the Author
Günther Ohloff (1924-2005) studied Pharmacy in Königsberg and Erlangen, as well as Chemistry at the TH Dresden. After his Ph.D. with Heinrich Wienhaus he moved to Schimmel, Miltitz, in 1951 but left Eastern Germany in 1953 for Dragoco, Holzminden. From 1959-1962 he stayed at the Max Planck Institute, Mülheim, and then joined Firmenich, Geneva, where he was research director from 1968 until his retirement 1989. His prize-awarded scientific work is documented in 228 publications and 111 patents.

Wilhelm Pickenhagen (*1939) obtained a Ph.D. at the University of Paris with Edgar Lederer. After a fellowship with George Büchi at MIT, research chemist and then department head at Firmenchi, Geneva, general manager Flavor Technology at Firmenchi, Princeton, and from 1996-2003 head of corporate research of Dragoco, Holzminden. Lecturer and Honorary Professor at the University of Gõttingen, and lecturer at the ISIPCA Versaitles. He has authored 60 scientific and 29 patent publications.

Philip Kraft (*1969) studied Chemistry at Kie University, and obtained his Ph.D. with Werner Tochtermann on macrocyclic musks in collaboration with Haarmann Et Reimer, Holzminden. In 1996, he joined Givaudan Research, Dübendorf, and became group leader in 2001. He has authored 78 publications and 27 patents, invented Super Muguet, Azurone, Pomarose, Serenolide, Cassyrane, and Sylkolide, and reads Fragrance Chemistry at the Universities of Bern and Zurich, and the ETH Zurich.

Excellent information written more like a chemistry text

This book is choc-full-o-information and is very useful, I recommend it to anyone diving into perfumery. I do not have a strong chemistry background, just a little in high school and some self study. I also own The Chemistry of Fragrances. Both books are excellent but Scent and Chemistry is a lot more difficult to read because even the history sections are written from the perspective, mode of speech and writing style of a scientist so the information is not presented in a very interesting or approachable way to me as an artist. Annotation numbers referencing chemical bond diagrams break up every sentence, visually they are like speed and comprehension bumps in the text. If you are accustomed to reading white papers in chemistry this book might be easier for you to read through but it lacks that smooth cohesion that one would expect from a well written text book. I don't mean to say that it's not informative or that it's poorly written, it's just not well written in the way that a good writer does. The publisher could tone down the illustration numbers by removing the bold type-face and making them smaller than the rest of the text, that would improve readability. This book moreso than The Chemistry of Fragrances has tons of diagrams and illustrations but most of them are chemical bonds so you need to understand what you are looking at in order to find those illustrations useful in the context of the text since it is visually broken by the annotations. Over all I'd say this book is worth every penny and very valuable as a text book but there is always room for improvement.

technical work with some good tid-bits

This is not the book to buy if you want to know how to make a perfume. There is a ton of information on how individual aromachemicals are made-a lot of little representations of scent molecules etc and there are-if you care to painstakingly search through the entire book-tiny little morsels of info that are actually useful if you are trying to make a perfume.

Very good book for people interested in the fragrance chemistry. The text is nicely written and contained abundant bibliographic references. The figures are in color and printed with a high quality.
